Photo Essay: The Lunch Box serves 40 years of Mexican food tradition to loyal customers

Coming up on its 40-year anniversary, The Lunch Box Mexican restaurant, 667 N Carolina, continues to be a bustling family affair. Starting from humble beginnings with only 5 tables the establishment has branched out to cafes at several locations. When founder and matriarch Martha Rios stepped down 10 years ago to care for her sick husband, her son Luis alongside his wife Claudia Rios continued to manage the business with the help of their sons, daughters, nieces and nephews. Other employees have been with The Lunch Box for decades, which made the period of lockdown in 2020 difficult for the team. “It hasn’t always been easy, but having the help makes a difference,” Claudia Rios said.
